When you install xen-system-<arch> it will add an option to grub to boot Xen. It works for me fine in Ubuntu 16.04 and installs /boot/xen-4.6-amd64. Generic kernel remains installed and you can switch to it from grub menu if Xen doesn't work. For more details find some links below.
