I didn't get a response from the Xen community. Anyway I realized that to retain the xen console, it is as simple as to comment out the following line in xen/arch/x86/setup.c

console_endboot(cmdline && strstr(cmdline, "tty0"));

Hope this may be helpful to anyone out there who is new to xen/kernel programming like myself.
