Linux has specifically got code added to support >128 entry E820 maps, and I assume sooner or later Xen will need to get this too. With UEFI, it is already an uncertain business to consolidate the UEFI memory map into an E820 one (collapsing compatible successive UEFI memory blocks into one usually reduces the entry count significantly, but there's really no guarantee for this to be the case now and forever).
