Turns out this problem isn't exclusive to Xen kernels as someone on one of the Ubuntu lists has a similar problem. Even though I can't get a display under text mode, X will work.

To try, in no order, are:

* rm /etc/X11/xorg.conf - and let X autoconfigure
* vi /etc/X11/xorg.conf - and use a lower resolution, 800x600, until you fix the xorg.conf
* just edit xorg.conf and read the X logs to debug xorg.conf as normal.

So in short it is working by just configuring X properly - still can't text mode working ...
