You could just a distro that forward ports the Xen patches to a newer kernel 
version.

Fedora does this, but may not be stable enough for your requirements.  Ubuntu 
may do this too, but their Xen support isn't as well developed as some other 
distros.

Have you thought about trying a SuSE derivative?  That might do what you want?
