This setting will expose 8 core cpu's to the vm:

cpuid=['1:edx=xxx1xxxxxxxxxxxxxxxxxxxxxxxxxxxx,ebx=xxxxxxxx00010000xxxxxxxxxxxxxxxx','4,0:eax=001111xxxxxxxxxxxxxxxxxxxxxxxxxx']

Requires Xen 3.4.
