The HVM guest that we ran was also Ubuntu 8.04, but again I don't think the domU should matter either. We ran on pretty nice boxes - Intel Core 2 duos, with 4 GB of RAM. We gave 1 GB or so to the guest, but you should be able to get away with less. Another potential use can be for Xen testing and development (since you don't need a whole physical system to test Xen) Hope that helps.
